Paul Harvey's Wild Rice Soup

Total Time: 32 hrs Preparation Time: 30 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1/2 cup wild rice, uncooked
  • 1 minced onion
  • 2 tablespoons butter
  • 2 cups water
  • 2 cubed potatoes
  • 1 bouillon cube (chicken or vegetable)
  • 1 quart milk
  • 1 lb velveeta cheese, grated

Recipe

  • 1 prepare wild rice according to directions on package.
  • 2 sauté onion in butter until tender.
  • 3 add water, potatoes and bouillon.
  • 4 cook until potatoes are tender.
  • 5 add milk and cheese, stirring occasionally.
  • 6 when mixture is creamy, add cooked rice.
  • 7 you can garnish the soup with cooked bacon bits.
  • 8 you can add mushrooms and/or bell peppers with the onion when cooking.
