Garlic And Potato Soup ( Vegan )

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons olive oil
  • 1 cup onion, chopped
  • 4 cups low sodium vegetable broth
  • 4 cups water
  • 2 lbs russet potatoes, peeled and cut into 1/2 inch pieces
  • 7 large garlic cloves, peeled
  • salt and pepper

Recipe

  • 1 heat oil in a large saucepan over medium heat.
  • 2 add onion and cook, stirring often, for 10 minutes or until golden.
  • 3 add broth, water, potatoes, and garlic. bring to a boil.
  • 4 reduce heat to medium-low. cover and simmer 20 minutes or until potatoes are very tender.
  • 5 cool slightly.
  • 6 coarsely puree soup in a blender or food processor 1 cup at a time. (or puree the whole batch in the pot with an immersion blender.).
  • 7 don't over process!
  • 8 return soup to pan, and season with salt and pepper.
  • 9 simmer until heated through.
