Gluten-free Creamy Potato Soup

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 4 large potatoes, cut into cubes
  • 1 large onion
  • 4 cups water
  • 1/3 cup oil
  • 1/4 cup chopped parsley
  • 2 teaspoons salt
  • pepper

Recipe

  • 1 place the ingredients in a 4 quart soup pot and cook uncovered over low heat for 30-40 minutes.
  • 2 for a thicker broth press some of the potatoes against the side of the pot with a spoon.
