Lentil Tofu Soup

Ingredients
- Servings: 4
- 2 chopped red onions
- 4 tablespoons olive oil
- 100 g smoked tofu, cubbed
- 2 tablespoons flour
- 250 g canned lentils (drained weight)
- 1250 ml vegetable broth
- 100 ml tomato puree
- 1 teaspoon sage
- 1/2 teaspoon rosemary
- 1 teaspoon oregano
- pepper
- salt
- cayenne pepper
Recipe
- 1 heat the oil and cook chopped onion until it is brown and aromatic.
- 2 add tofu and flour and cook for another minute.
- 3 stir in vegetable broth, drained lentil and tomato puree.
- 4 add herbs and spices. salt if necessary. cook for 20 minutes.
- 5 serve hot.
