Lentil Tofu Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 chopped red onions
  • 4 tablespoons olive oil
  • 100 g smoked tofu, cubbed
  • 2 tablespoons flour
  • 250 g canned lentils (drained weight)
  • 1250 ml vegetable broth
  • 100 ml tomato puree
  • 1 teaspoon sage
  • 1/2 teaspoon rosemary
  • 1 teaspoon oregano
  • pepper
  • salt
  • cayenne pepper

Recipe

  • 1 heat the oil and cook chopped onion until it is brown and aromatic.
  • 2 add tofu and flour and cook for another minute.
  • 3 stir in vegetable broth, drained lentil and tomato puree.
  • 4 add herbs and spices. salt if necessary. cook for 20 minutes.
  • 5 serve hot.
