Quick Turkey Chili

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 lb ground turkey
  • 2 (15 ounce) cans beans
  • 1 (10 ounce) can rotel tomatoes
  • 1/2 large yellow onion
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 2 chicken bouillon cubes
  • 5 cups hot water
  • 1/4 cup cornmeal
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • salt & pepper
  • 1/2 cup cilantro, chopped

Recipe

  • 1 brown ground turkey.
  • 2 saute diced onions in 2 tablespoons olive oil over medium heat until just starting to soften. add garlic and saute for one minute.
  • 3 add rotel tomatoes (i whiz mine up in the food processor).
  • 4 add browned turkey and beans.
  • 5 add hot water, bouillon cubes and seasonings. you can add more or less water to your liking.
  • 6 simmer for 20 minutes.
  • 7 sprinkle cornmeal over soup and stir in to thicken.
  • 8 just before serving stir in chopped cilantro.
