Smoky Celeriac And Bean Soup

Ingredients

- 1 onion, diced
- 1 tablespoon grapeseed oil
- 1 teaspoon garlic powder
- 1 teaspoon ground fenugreek
- 1 teaspoon paprika
- 1/4 teaspoon spanish smoked paprika
- 2 lbs celery root or 2 lbs celeriac, peeled and diced
- 1 (15 ounce) can cannellini or 1 (15 ounce) can other beans, with liquid
- 1 cup greens (i used beet greens)
Recipe
- 1 saute onion in oil for 10 minutes.
- 2 add spices, stir until fragrant (30 seconds - 1 minute).
- 3 add celery root (celeriac) and cover with water.
- 4 bring to a boil, cover, and simmer until celeriac is soft (about 20 minutes).
- 5 meanwhile cook greens in 1 cup of water.
- 6 when celeriac is soft, add can of beans with liquid, and puree in a blender. return to pot.
- 7 mix in greens with their liquid. add salt and pepper to taste.
