No Point Vegetable Soup

Ingredients

  • Servings: 1
  • 100 g tomatoes, chopped (sm. tin)
  • 2 carrots, chopped
  • 1 onion, choped
  • 1 courgette, chopped
  • 1 vegetable stock cube
  • 1/2 pint water
  • salt and pepper

Recipe

  • 1 place all the ingredients in a saucepan.
  • 2 cover and cook until the vegetables are soft (about 20 minutes) for a smooth soup, puree all the ingredients in a blender, for a chunky soup, just puree half the mixture.
  • 3 return to the saucepan and heat through before serving.
