No Point Vegetable Soup

Ingredients
- Servings: 1
- 100 g tomatoes, chopped (sm. tin)
- 2 carrots, chopped
- 1 onion, choped
- 1 courgette, chopped
- 1 vegetable stock cube
- 1/2 pint water
- salt and pepper
Recipe
- 1 place all the ingredients in a saucepan.
- 2 cover and cook until the vegetables are soft (about 20 minutes) for a smooth soup, puree all the ingredients in a blender, for a chunky soup, just puree half the mixture.
- 3 return to the saucepan and heat through before serving.
