Portuguese Soup

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 4
  • 1 quart beef stock
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 1/4 cup tomato sauce
  • 8 ounces smoked sausage, sliced
  • 3 medium potatoes, peeled and cubed
  • 1 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 2 tablespoons minced garlic
  • 3 cups kale or 3 cups spinach
  • salt and pepper

Recipe

  • 1 combine all ingredients except kale in slow cooker. cover and cook on high 4-5 hours, adding kale during last 15 minutes.
