Naudine's Potato And Spinach Bake

Ingredients
- Servings: 6
- 4 large potatoes
- 1 large onion, chopped
- 2 tablespoons olive oil
- 1 bunch spinach, with stems chopped
- 250 ml sour cream
- 100 ml milk
- 1 (2 ounce) envelope soup mix, your choice
- 2 cups cheddar cheese, grated
Recipe
- 1 preheat oven grill.
- 2 cut potatoes in chunks and cover bottom of ovenproof dish with potato chunks.
- 3 fry onion in oil, in a skillet, until translucent.
- 4 add chopped spinach and cream, reduce heat and simmer until spinach is cooked.
- 5 mix soup powder and milk and stir into spinach mix.
- 6 remove from heat and pour over potatoes.
- 7 sprinkle cheese on top and place under grill until cheese bubbles.
- 8 reduce oven setting to 180 centigrade and bake for 15 minutes.
- 9 serve warm.
