Naudine's Potato And Spinach Bake

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 4 large potatoes
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 1 bunch spinach, with stems chopped
  • 250 ml sour cream
  • 100 ml milk
  • 1 (2 ounce) envelope soup mix, your choice
  • 2 cups cheddar cheese, grated

Recipe

  • 1 preheat oven grill.
  • 2 cut potatoes in chunks and cover bottom of ovenproof dish with potato chunks.
  • 3 fry onion in oil, in a skillet, until translucent.
  • 4 add chopped spinach and cream, reduce heat and simmer until spinach is cooked.
  • 5 mix soup powder and milk and stir into spinach mix.
  • 6 remove from heat and pour over potatoes.
  • 7 sprinkle cheese on top and place under grill until cheese bubbles.
  • 8 reduce oven setting to 180 centigrade and bake for 15 minutes.
  • 9 serve warm.
