Orange Cilantro Gazpacho

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1 bell pepper, diced
  • 4 ounces cucumbers, diced
  • 2 garlic cloves, chopped
  • 1 orange, chopped
  • 3 ounces spring onions or 3 ounces red onions, chopped
  • 2 tablespoons cilantro
  • 1 cup ice water
  • 1/2 teaspoon crushed black pepper

Recipe

  • 1 pulse half of all ingredients in a food processor to desired consistency.
  • 2 cover and refrigerate at least 2 hrs, or overnight.
