Oyster And Potato Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 5 medium potatoes (cubed)
  • 1 stalk celery (diced)
  • 1 1/4 cups water
  • 1 (12 ounce) can evaporated milk
  • 1/4 teaspoon salt
  • 1 1/2 dozen raw oysters (reserve 1/4 cup liquor from oysters)
  • 2 teaspoons parsley, flades
  • 3 green onions (sliced)
  • 1/4 cup butter or 1/4 cup margarine

Recipe

  • 1 combine first five ingredients in a saucepan.
  • 2 cover and cook 20 minutes or until potatoes are tender (do not drain).
  • 3 mash vegetables.
  • 4 stir in salt, milk, butter and parsley.
  • 5 heat and simmer.
  • 6 then add the oysters with their liquor and cook briefly until the oysters curl.
  • 7 serve at once.
