Mange-tout Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 medium onion, diced
  • 225 g mange-touts peas, topped and tailed
  • 1 small potato, diced
  • 25 g butter
  • 600 ml vegetable stock
  • 300 ml milk

Recipe

  • 1 melt butter and sauté onion until transparent.
  • 2 add mange tout, potato and stock.
  • 3 bring to boil, cover and simmer for 20 minutes.
  • 4 take off heat, add milk and liquidize. reheat if needed.
