Grandfather's Soup

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 tablespoons butter
  • 1 large onion, chopped
  • 2 -3 large potatoes, peeled and diced
  • 3 cups water
  • 1 pinch salt
  • 1/2 cup plain flour (all purpose flour)
  • 1/4 cup milk
  • 1 cup cream or 1 cup milk or 1 cup half-and-half

Recipe

  • 1 heat 2 tablespoons of the butter in a large pot over moderate heat and saute onion until tender but not brown (about 5 minutes).
  • 2 add potatoes, water and salt and bring to a simmer.
  • 3 meanwhile, mix the remaining butter, flour and enough milk to make a stiff dough.
  • 4 drop pea size balls of the dough into the soup.
  • 5 cook until potatoes are tender, about 8-10 minutes.
  • 6 stir in the cream, milk or half and half.
  • 7 return to simmer before serving.
