Mushroom And Thyme Soup

Ingredients

- 1/4 cup butter
- 1 onion, chopped
- 1 lb mushroom, thinly sliced
- 6 ounces shiitake mushrooms, stems removed and thinly sliced
- 2 tablespoons flour
- 1 1/2 teaspoons dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 5 cups chicken stock
- 1 cup dry wine
Recipe
- 1 in large pot, melt butter. add onion, mushrooms and shiitakes; sauté until mushrooms are browned, 10-15 minutes.
- 2 sprinkle with flour, thyme, salt and pepper; sauté for 2 minutes.
- 3 whisk in stock and wine; bring to a boil. reduce heat and simmer, stirring occasionally, for 30 minutes to blend flavors.
