Mushroom And Thyme Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/4 cup butter
  • 1 onion, chopped
  • 1 lb mushroom, thinly sliced
  • 6 ounces shiitake mushrooms, stems removed and thinly sliced
  • 2 tablespoons flour
  • 1 1/2 teaspoons dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 cups chicken stock
  • 1 cup dry wine

Recipe

  • 1 in large pot, melt butter. add onion, mushrooms and shiitakes; sauté until mushrooms are browned, 10-15 minutes.
  • 2 sprinkle with flour, thyme, salt and pepper; sauté for 2 minutes.
  • 3 whisk in stock and wine; bring to a boil. reduce heat and simmer, stirring occasionally, for 30 minutes to blend flavors.
