Quick & Easy Black Bean Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup onion, chopped
  • 3/4 cup celery, chopped
  • 2 teaspoons garlic, minced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can refried black beans
  • 1 (15 ounce) can diced tomatoes and green chilies
  • 1/2 cup mild thick & chunky salsa
  • 1 1/2 cups beef stock
  • 1 1/2 teaspoons cumin
  • 1/4 teaspoon dry oregano

Recipe

  • 1 combine all ingredients in a pot, bring to a boil on medium high heat.
  • 2 reduce heat to a simmer and cook for 25 minutes or until vegetables are tender.
