Red Lentil Soup With Lemon

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 cup red lentil
  • 1 large carrot, peeled and diced
  • 1 lemon, juiced
  • 2 tablespoons cilantro, chopped

Recipe

  • 1 in a large pot heat the oil and sauté the onion for 3 minutes. add the garlic and sauté an additional minute.
  • 2 stir in the tomato paste, cumin, salt, pepper and cayenne and cook for an additional 2 minutes.
  • 3 add the broth, lentils and carrot. bring to a boil then lower the heat and simmer for 30 minutes - until the lentils and carrot are soft. taste and adjust the seasoning as needed.
  • 4 use an immersion blender to puree the soup. add the lemon juice and cilantro and serve.
