Onion Brie Soup

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 8 cups onions, thinly sliced
  • 2 tablespoons sugar
  • 1/3 cup butter or 1/3 cup margarine
  • 6 (14 ounce) cans chicken broth or 6 (14 ounce) cans homemade chicken stock
  • 12 ounces brie cheese, rind removed and cubed

Recipe

  • 1 in a dutch oven over medium heat saute onions and sugar in butter for about 30 minutes until onions are golden brown and cooked.
  • 2 stir in chicken broth.
  • 3 add brie.
  • 4 heat gently until cheese is melted, stirring occasionally.
