Pancetta, Diced Potato And Spinach Soup #5fix

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • 1/4 lb pancetta (medium thickness)
  • 1 (20 ounce) package simply potatoes diced potatoes with onion
  • 2 tablespoons tomato paste
  • 6 cups chicken broth
  • 2 cups fresh baby spinach

Recipe

  • 1 chop pancetta into small cubes.
  • 2 in a large soup pot, toss in pancetta and simply potatoes diced potato with onion. cook over medium heat until pancetta is crispy. drain off any fat.
  • 3 return pot to meduim heat. stir in tomato paste until potatoes are evenly coated.
  • 4 once the potatoes are coated, pour in chicken broth. bring to a medium boil then reduce to a simmer.
  • 5 simmer for 30min. until potatoes are tender.
  • 6 add spinach and cook for an additional 5min. until spinach is wilted.
