Quinoa Soup With Corn

Ingredients

  • Servings: 4
  • 14 1/2 ounces canned vegetable broth
  • 1/2 cup quinoa, rinsed
  • 2 garlic cloves, minced
  • 1/4 teaspoon cayenne
  • 1 cup corn kernel (fresh or frozen)
  • 1 1/2 tablespoons chopped cilantro or 1 1/2 tablespoons parsley
  • 1 tablespoon fresh lime juice

Recipe

  • 1 in a small soup pot, combine the broth, quinoa, garlic, cayenne, and 1 3/4 cups water.
  • 2 bring to a boil, reduce the heat to medium, and cook 10 minutes.
  • 3 add the corn kernels and cook until hot and tender, about 3 minutes.
  • 4 stir in the cilantro and cook 1 minute.
  • 5 remove from the heat and stir in the lime juice.
  • 6 serve hot or cold.
