Quinoa Soup With Corn

Ingredients

- 14 1/2 ounces canned vegetable broth
- 1/2 cup quinoa, rinsed
- 2 garlic cloves, minced
- 1/4 teaspoon cayenne
- 1 cup corn kernel (fresh or frozen)
- 1 1/2 tablespoons chopped cilantro or 1 1/2 tablespoons parsley
- 1 tablespoon fresh lime juice
Recipe
- 1 in a small soup pot, combine the broth, quinoa, garlic, cayenne, and 1 3/4 cups water.
- 2 bring to a boil, reduce the heat to medium, and cook 10 minutes.
- 3 add the corn kernels and cook until hot and tender, about 3 minutes.
- 4 stir in the cilantro and cook 1 minute.
- 5 remove from the heat and stir in the lime juice.
