Ham And Potato Soup

Total Time: 2 hrs Preparation Time: 1 hr Cook Time: 1 hr

Ingredients

  • 1 large onion, thinly sliced
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon dried parsley
  • 3 garlic cloves
  • 3 bay leaves
  • 1/4 cup cooked ham
  • 3 1/2 cups water
  • 1 1/2 teaspoons chicken bouillon granules
  • 1/2 teaspoon pepper
  • 2 large potatoes, shredded
  • 1 1/2 cups cottage cheese
  • 1 tablespoon chili flakes (optional)

Recipe

  • 1 cover and cook onions in butter in a 4 quart dutch oven over medium-low heat for 10 minutes, stirring frequently.
  • 2 stir in parsley, garlic, bay leaves, and ham.
  • 3 cook, uncovered over high heat 5 minutes, stirring frequently.
  • 4 stir in the remaining ingredients except cheese.
  • 5 heat to boiling; reduce heat.
  • 6 cover and simmer for 30 minutes, stirring occasionally.
  • 7 remove bay leaves and top each serving with the cheese.
