Ham And Potato Soup

Ingredients
- 1 large onion, thinly sliced
- 1 1/2 tablespoons olive oil
- 1 tablespoon dried parsley
- 3 garlic cloves
- 3 bay leaves
- 1/4 cup cooked ham
- 3 1/2 cups water
- 1 1/2 teaspoons chicken bouillon granules
- 1/2 teaspoon pepper
- 2 large potatoes, shredded
- 1 1/2 cups cottage cheese
- 1 tablespoon chili flakes (optional)
Recipe
- 1 cover and cook onions in butter in a 4 quart dutch oven over medium-low heat for 10 minutes, stirring frequently.
- 2 stir in parsley, garlic, bay leaves, and ham.
- 3 cook, uncovered over high heat 5 minutes, stirring frequently.
- 4 stir in the remaining ingredients except cheese.
- 5 heat to boiling; reduce heat.
- 6 cover and simmer for 30 minutes, stirring occasionally.
- 7 remove bay leaves and top each serving with the cheese.
