Panic Time Pantry Soup

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 quarts chicken broth
  • 1/2 onion, pureed
  • 2 cups cajun-style sausage, sliced
  • 2 chicken breasts, diced (~1 inch cubes)
  • 2 potatoes, diced (~1 inch cubes)
  • 1 (4 ounce) can mushrooms (or fresh)
  • 10 ounces frozen spinach, drained (or 14 oz can)
  • 1 (14 ounce) can stewed tomatoes
  • 1 (14 ounce) can whole corn, drained
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon rosemary
  • 1/4 teaspoon gumbo file

Recipe

  • 1 put broth on a low heat to simmer. add onion, sausage, chicken, mushroom, spinach, tomatoes, corn, and all spices except file.
  • 2 simmer at low boil for 10-15 minutes, stirring occasionally.
  • 3 add potato, continue to simmer another 10-15 minutes until potatoes are done, stirring occasionally.
  • 4 just before serving, sample broth to see if the spices are acceptable.
  • 5 add file just before serving.
