Panic Time Pantry Soup

Ingredients

- 2 quarts chicken broth
- 1/2 onion, pureed
- 2 cups cajun-style sausage, sliced
- 2 chicken breasts, diced (~1 inch cubes)
- 2 potatoes, diced (~1 inch cubes)
- 1 (4 ounce) can mushrooms (or fresh)
- 10 ounces frozen spinach, drained (or 14 oz can)
- 1 (14 ounce) can stewed tomatoes
- 1 (14 ounce) can whole corn, drained
- 1 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon rosemary
- 1/4 teaspoon gumbo file
Recipe
- 1 put broth on a low heat to simmer. add onion, sausage, chicken, mushroom, spinach, tomatoes, corn, and all spices except file.
- 2 simmer at low boil for 10-15 minutes, stirring occasionally.
- 3 add potato, continue to simmer another 10-15 minutes until potatoes are done, stirring occasionally.
- 4 just before serving, sample broth to see if the spices are acceptable.
- 5 add file just before serving.
