Quick & Easy Butternut Squash Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup butternut squash, diced
  • 1/2 cup potato, diced
  • 1/2 cup carrot, diced
  • 1/3 cup onion, diced
  • 1 teaspoon butter
  • 3/4 cup broth
  • 1 pinch caraway seed, ground
  • 1 pinch thyme
  • 1 pinch ground pepper
  • 1 pinch curry powder
  • 1 pinch ginger, ground
  • 1 pinch nutmeg
  • 1 pinch cinnamon
  • 1 teaspoon sweetened condensed milk
  • 1/8 cup milk

Recipe

  • 1 saute diced onions in butter until golden.
  • 2 add diced butternut squash, potatoes and carrots and saute until everything starts to brown.
  • 3 add broth and all the spices and cook for 15-20 minutes until everything is very tender.
  • 4 add the sweetened condensed milk and puree soup to preferred consistency. ad milk for a creamier soup and serve with some toasted bread.
