Red Lentil Soup With Lemon And Caramelized Onions

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 large onion, sliced thin
  • 3 tablespoons butter
  • 3 teaspoons sugar
  • 3 cups red lentils
  • 4 cups chicken stock (or veggie stock)
  • 4 cups water
  • 1/2 teaspoon cayenne
  • 1 teaspoon turmeric
  • salt
  • pepper
  • 4 tablespoons lemon juice
  • 1 cup tbsps chopped parsley

Recipe

  • 1 1. melt butter in saucepan over medium heat, add onion and sautee until brown.
  • 2 2. sprinkle sugar over onions and cook until sticky and sweet.
  • 3 3. separately, in a small pot, add lentils, stock, water, cayenne, tumeric and season with salt and pepper. bring to a boil and then simmer until lentils are soft (about 25-35 minutes).
  • 4 3. stir in parsley and lemon juice.
  • 5 4. ladle soup and garnish with onions.
