Lemony Quinoa Primavera Soup

Ingredients

  • Servings: 8
  • 1 cup quinoa, rinsed
  • 8 cups vegetable broth or 8 cups chicken broth
  • 1 tablespoon finely grated lemon zest
  • 1 lb asparagus, trimmed (and cut in ム1/4 inch pieces)
  • 1 1/2 cups peas
  • 1/3 cup minced fresh chives
  • 2 tablespoons lemon juice
  • salt and pepper
  • 1/3 cup freshly grated parmesan cheese

Recipe

  • 1 in a large pot combine quinoa, broth and lemon zest. bring to a boil over medium heat. reduce heat to low and simmer for 15 minutes.
  • 2 stir in asparagus and peas; simmer, uncovered, for 3-5 minutes or until asparagus and quinoa are tender.
  • 3 stir in chives and lemon juice. season to taste with salt and pepper. serve sprinkled with cheese.
