Lemony Quinoa Primavera Soup

Ingredients

- 1 cup quinoa, rinsed
- 8 cups vegetable broth or 8 cups chicken broth
- 1 tablespoon finely grated lemon zest
- 1 lb asparagus, trimmed (and cut in ム1/4 inch pieces)
- 1 1/2 cups peas
- 1/3 cup minced fresh chives
- 2 tablespoons lemon juice
- salt and pepper
- 1/3 cup freshly grated parmesan cheese
Recipe
- 1 in a large pot combine quinoa, broth and lemon zest. bring to a boil over medium heat. reduce heat to low and simmer for 15 minutes.
- 2 stir in asparagus and peas; simmer, uncovered, for 3-5 minutes or until asparagus and quinoa are tender.
- 3 stir in chives and lemon juice. season to taste with salt and pepper. serve sprinkled with cheese.
