Green Pea Soup With Smoked Ham

Ingredients

- 1 tablespoon butter
- 1 large onion, chopped
- 2 (14 ounce) cans chicken broth
- 1 (14 ounce) package frozen mashed potatoes
- 2 cups frozen peas
- 1 teaspoon dried tarragon
- 1 1/2 cups milk or 1 1/2 cups light cream
- 1/4 teaspoon pepper
- 6 ounces smoked ham, finely diced
Recipe
- 1 in large saucepan, melt butter. add onion and cook until softened. add chicken broth, potatoes, peas, tarragon and 1 ½ cups water.
- 2 bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.
- 3 pulse soup in food processor or blender.
- 4 return puree to saucepan. stir in milk and season with pepper. ladle into bowls and top with ham.
