Mustard And Chive Sauce

Ingredients

- 50 g butter
- 50 g flour
- 2 tablespoons dijon mustard or 2 tablespoons english mustard
- 450 ml milk
- salt and pepper
- 3 tablespoons finely snipped chives
Recipe
- 1 melt the butter in a small pan and stir in the flour.
- 2 remove from the heat and stir in the mustard.
- 3 return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.
- 4 season with salt and pepper and let simmer gently, uncovered, for 10-15 minutes.
- 5 this cooks the flour and thickens the sauce.
- 6 stir in the chives, adding a touch of soup stock or water if it seems too thick.
- 7 spoon over slices of ham.
