Mustard And Chive Sauce

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 50 g butter
  • 50 g flour
  • 2 tablespoons dijon mustard or 2 tablespoons english mustard
  • 450 ml milk
  • salt and pepper
  • 3 tablespoons finely snipped chives

Recipe

  • 1 melt the butter in a small pan and stir in the flour.
  • 2 remove from the heat and stir in the mustard.
  • 3 return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.
  • 4 season with salt and pepper and let simmer gently, uncovered, for 10-15 minutes.
  • 5 this cooks the flour and thickens the sauce.
  • 6 stir in the chives, adding a touch of soup stock or water if it seems too thick.
  • 7 spoon over slices of ham.
