Potato Leek Hummus Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 30 ml butter
  • 3 large leeks, portion chopped
  • 5 potatoes, peeled & chopped
  • 1 large cooking onion, chopped
  • 250 ml wine (fruity chardonnay recommended)
  • 250 ml hummus
  • 1000 ml vegetable broth or 1000 ml chicken broth or 1000 ml turkey broth
  • pepper

Recipe

  • 1 melt butter in soup pot.
  • 2 sauté in butter the leeks and onion until opaque.
  • 3 add broth and potatoes--bring to a boil then reduce heat and simmer until potatoes are cooked, stir to prevent burning.
  • 4 add hummus, stir.
  • 5 turn off heat and immediately add wine, stir.
  • 6 add pepper to taste and serve.
