Potato Leek Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 potatoes
  • 4 leeks
  • 4 vegetable bouillon cubes

Recipe

  • 1 slice the sections of each leek and then cut the slices into half moon shapes. rinse thoroughly to remove dirt.
  • 2 peel and cut the potatoes into cubes.
  • 3 place leeks and potatoes into a large pot and cover with water.
  • 4 cover pot and let cook over medium/high heat until potatoes and leeks are tender.
  • 5 add bouillon cubes and stir.
  • 6 remove from heat and pour into blender.
  • 7 blend at medium/high speed until the soup is smooth and creamy. serve.
