Potato Leek Soup

Ingredients

- 4 potatoes
- 4 leeks
- 4 vegetable bouillon cubes
Recipe
- 1 slice the sections of each leek and then cut the slices into half moon shapes. rinse thoroughly to remove dirt.
- 2 peel and cut the potatoes into cubes.
- 3 place leeks and potatoes into a large pot and cover with water.
- 4 cover pot and let cook over medium/high heat until potatoes and leeks are tender.
- 5 add bouillon cubes and stir.
- 6 remove from heat and pour into blender.
- 7 blend at medium/high speed until the soup is smooth and creamy. serve.
