Potato Leek Soup

Ingredients

• 2 cups water
• 2 medium potatoes, peeled and diced
• 2 slices bacon, cooked and crumbled
• 2 cups milk
• 3/4 cup instant mashed potatoes
• 1 (1 7/8 ounce) package leek soup mix
• 1/2 cup cheddar cheese, grated

Recipe

• 1 in a large saucepan, bring the water, potatoes, and bacon to a boil.
• 2 reduce heat, cover and simmer 10-15 minutes or until potatoes are tender.
• 3 reduce heat to low.
• 4 stir in the milk, potato flakes and soup mix.
• 5 cook and stif for 5 minutes or until heated through.
• 6 garnish with cheese.
