Potato Leek Soup

Ingredients

- 2 cups water
- 2 medium potatoes, peeled and diced
- 2 slices bacon, cooked and crumbled
- 2 cups milk
- 3/4 cup instant mashed potatoes
- 1 (1 7/8 ounce) package leek soup mix
- 1/2 cup cheddar cheese, grated
Recipe
- 1 in a large saucepan, bring the water, potatoes, and bacon to a boil.
- 2 reduce heat, cover and simmer 10-15 minutes or until potatoes are tender.
- 3 reduce heat to low.
- 4 stir in the milk, potato flakes and soup mix.
- 5 cook and stif for 5 minutes or until heated through.
- 6 garnish with cheese.
