Potato Lunch Casserole

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 5 lbs baking potatoes, scrubbed and sliced 1/4 inch thick but do no peel
  • 1/2 cup margarine
  • 2 cups water
  • 2 (1 ounce) envelopes lipton dry onion soup mix (i use the onion mushroom flavor)
  • 1 cup diced onion
  • 1 cup diced celery
  • 8 button mushrooms, grated

Recipe

  • 1 arrange potatoes in greased 9x13 pna.
  • 2 sprinkle the mushrooms, onions and celery over the top of the potatoes evenly.
  • 3 set aside.
  • 4 combine margarine, water, dry soup mix and bring to boil.
  • 5 pour over potatoes.
  • 6 cover tightly with foil and bake at 350 for one hour or until potatoes are tender.
