Potato Lunch Casserole

Ingredients
- 5 lbs baking potatoes, scrubbed and sliced 1/4 inch thick but do no peel
- 1/2 cup margarine
- 2 cups water
- 2 (1 ounce) envelopes lipton dry onion soup mix (i use the onion mushroom flavor)
- 1 cup diced onion
- 1 cup diced celery
- 8 button mushrooms, grated
Recipe
- 1 arrange potatoes in greased 9x13 pna.
- 2 sprinkle the mushrooms, onions and celery over the top of the potatoes evenly.
- 3 set aside.
- 4 combine margarine, water, dry soup mix and bring to boil.
- 5 pour over potatoes.
- 6 cover tightly with foil and bake at 350 for one hour or until potatoes are tender.
