Potato Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb potato
  • 1 egg
  • 1 small onion, chopped
  • 2 tablespoons sweet relish
  • 1/4 cup vinegar
  • 1/2 cup skim milk
  • 8 ounces low-fat mayonnaise
  • 2 tablespoons mustard
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper or 1/8 teaspoon paprika

Recipe

  • 1 peel, boil and cube potatoes.
  • 2 hard boil egg, slice.
  • 3 in a covered bowl place potatoes, egg and onions.
  • 4 to sour the milk, combine vinegar and milk.
  • 5 pour over potatoes mixture.
  • 6 add sweet relish and mustard.
  • 7 add mayonnaise as needed, and pepper and salt to taste.
  • 8 mix thoroughly. if too soupy, add more mayonnaise.
  • 9 sprinkle with cayenne pepper or paprika if desired.
