Potato Salad

Ingredients

- 1 lb potato
- 1 egg
- 1 small onion, chopped
- 2 tablespoons sweet relish
- 1/4 cup vinegar
- 1/2 cup skim milk
- 8 ounces low-fat mayonnaise
- 2 tablespoons mustard
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper or 1/8 teaspoon paprika
Recipe
- 1 peel, boil and cube potatoes.
- 2 hard boil egg, slice.
- 3 in a covered bowl place potatoes, egg and onions.
- 4 to sour the milk, combine vinegar and milk.
- 5 pour over potatoes mixture.
- 6 add sweet relish and mustard.
- 7 add mayonnaise as needed, and pepper and salt to taste.
- 8 mix thoroughly. if too soupy, add more mayonnaise.
- 9 sprinkle with cayenne pepper or paprika if desired.
