Premeir Lentil Soup

Ingredients
- Servings: 4
- 1 cup lentils, rinsed
- 4 cups water
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/2 cup carrot, finely chopped
- 2 large garlic cloves, finely chopped
- 1 bay leaf
- salt and pepper
- 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
- 1 lemon, sliced (optional)
Recipe
- 1 place rinsed lentils in a dutch oven.
- 2 add all ingredients, except lemon.
- 3 bring to a boil, turn down to a simmer, cover and cook for about 1 hour or until vegetables are tender.
- 4 remove bay leaf, ladle into bowls and serve garnished with lemon slices.
