Premeir Lentil Soup

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 cup lentils, rinsed
  • 4 cups water
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrot, finely chopped
  • 2 large garlic cloves, finely chopped
  • 1 bay leaf
  • salt and pepper
  • 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
  • 1 lemon, sliced (optional)

Recipe

  • 1 place rinsed lentils in a dutch oven.
  • 2 add all ingredients, except lemon.
  • 3 bring to a boil, turn down to a simmer, cover and cook for about 1 hour or until vegetables are tender.
  • 4 remove bay leaf, ladle into bowls and serve garnished with lemon slices.
