Ingredients
- beet, cooked
- strawberry
- ginger, fresh diced
- lime juice (lemon will do)
Recipe
- 1 reserve water from cooking the beets, just in case you want to thin the soup out a bit.
- 2 after the beets are cooled, either leave them in the pot and use a stick blender or, better, place in your blender on steroids or food processor.
- 3 add everything else and blend well.
- 4 taste and adjust.
- 5 enjoy!
