Roasted Fennel Cauliflower Soup

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 cauliflower head
  • 1 lb fennel
  • 2 onions
  • 3 garlic cloves
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 2 cups fat-free half-and-half
  • 1 teaspoon salt
  • 3 teaspoons olive oil
  • 3 teaspoons lemon juice

Recipe

  • 1 pre heat oven to 350. slice fennel and onion in 1/4 inch slices, peel garlic, and seperate cauiflower into floerets. place all of above on large roasting pan cover toass olive oil and salt and pepper. place in oven and roast for 25 minute remove from oven place in large stock pot and cover with chicken broth. simmer for 20 minute remove from heat add half and half, cumin, and lemon juice. puree untill smooth. top with toasted pine nuts or truffle oil.
