Lentil Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 50 g red lentils
  • 1 medium onion
  • 1 medium carrot
  • 1 medium potato
  • 500 ml water
  • 1 ham stock cube
  • 1 pinch salt and pepper

Recipe

  • 1 place lentils into a sieve, wash under cold running water.
  • 2 place lentil, ham stock cube, salt and pepper and water into a large pot.
  • 3 bring to boil and reduce heat to a simmer.
  • 4 wash the carrot and potato and peel them.
  • 5 chop the onion finely.
  • 6 grate the potato and carrot.
  • 7 add the vegetables to the large pot, and bring to boil.
  • 8 simmer until all veg is soft.
  • 9 blending the soup is optional but i would recommend it.
