Rachel's Chicken Soup

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 chicken breast (diced into small cubes)
  • 10 baby carrots (diced)
  • 2 quarts chicken broth
  • 2 celery ribs
  • 14 1/2 ounces tomatoes with bell peppers (diced)
  • 1/4 cup onion (chopped)
  • 1/4 cup frozen corn
  • 1/4 cup frozen peas
  • 1 tablespoon cayenne pepper (use less if you want it to be less spicy.)
  • 2 tablespoons chicken bouillon (optional)
  • salt
  • pepper

Recipe

  • 1 boil 2 qts water.
  • 2 let chicken fully cook.
  • 3 cut up chicken.
  • 4 place chicken cubes back into the pot.
  • 5 put vegetables in the pot with the chicken and let cook until vegetables are semi-firm. dump the tomatoes into the pot.
  • 6 put spices in last.
  • 7 simmer for 5 minutes.
  • 8 serve.
