Onion & Cheese Soup

Ingredients

  • Servings: 6
  • 1 large onion, chopped
  • 3 tablespoons butter or 3 tablespoons margarine
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • pepper
  • 4 cups milk
  • 2 cups monterey jack cheese, shredded
  • seasoned croutons
  • grated parmesan cheese

Recipe

  • 1 in a large saucepan, saute the onion in butter.
  • 2 stir in the flour, salt and pepper until blended.
  • 3 gradually add the milk.
  • 4 bring to a boil; cook and stir for 2 minutes or until thickened. stir in cheese until melted.
  • 5 serve in soup mugs or bowls topped with croutons and parmesan cheese.
