Ingredients

- 1 large onion, chopped
- 3 tablespoons butter or 3 tablespoons margarine
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- pepper
- 4 cups milk
- 2 cups monterey jack cheese, shredded
- seasoned croutons
- grated parmesan cheese
Recipe
- 1 in a large saucepan, saute the onion in butter.
- 2 stir in the flour, salt and pepper until blended.
- 3 gradually add the milk.
- 4 bring to a boil; cook and stir for 2 minutes or until thickened. stir in cheese until melted.
- 5 serve in soup mugs or bowls topped with croutons and parmesan cheese.
