Green Herb Soup

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 1/2 tablespoons butter
  • 6 green onions, whites and greens sliced
  • 1 large potato, peeled and diced
  • 4 outer lettuce leaves, washed and torn into small pieces
  • 2 cups water
  • 1/2 lemon, juice of
  • pepper, to taste
  • 3 tablespoons chopped fresh herbs
  • 1/2 cup cream

Recipe

  • 1 melt butter, add green onions, and fry over a low heat until tender. add diced potato and stir for 1 minute. add lettuce. cover with water and bring to a boil. simmer for 20 minutes. stir in lemon juice and pepper. using a blender blend until smooth or push soup through a sieve if no blender is available. add herbs and cream. chill.
