Green Herb Soup

Ingredients
- Servings: 6
- 1 1/2 tablespoons butter
- 6 green onions, whites and greens sliced
- 1 large potato, peeled and diced
- 4 outer lettuce leaves, washed and torn into small pieces
- 2 cups water
- 1/2 lemon, juice of
- pepper, to taste
- 3 tablespoons chopped fresh herbs
- 1/2 cup cream
Recipe
- 1 melt butter, add green onions, and fry over a low heat until tender. add diced potato and stir for 1 minute. add lettuce. cover with water and bring to a boil. simmer for 20 minutes. stir in lemon juice and pepper. using a blender blend until smooth or push soup through a sieve if no blender is available. add herbs and cream. chill.
