Potato Leek Soup

Ingredients
- Servings: 4
- 2 tablespoons butter
- 2 medium leeks, chopped
- 1 small onion, chopped
- 1 carrot, chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 2 cups water
- 4 medium potatoes, chopped
- 1/2 teaspoon celery seed
- 3/4 teaspoon dried thyme
- 1/4 teaspoon basil
- 1 cup milk
- 1/2 cup wine
- salt and pepper
- 1/4 cup chopped parsley
Recipe
- 1 saute leeks, onion, carrot and celery in butter in a stockpot or large saucepan.
- 2 add chicken broth, water, and potatoes and bring to boil.
- 3 simmer 15 minutes.
- 4 puree mixture in batches in blender, and return to pot.
- 5 add milk and wine and reheat.
- 6 add salt and pepper to taste.
- 7 serve topped with parsley.
