Potato Leek Soup

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 2 medium leeks, chopped
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 2 cups water
  • 4 medium potatoes, chopped
  • 1/2 teaspoon celery seed
  • 3/4 teaspoon dried thyme
  • 1/4 teaspoon basil
  • 1 cup milk
  • 1/2 cup wine
  • salt and pepper
  • 1/4 cup chopped parsley

Recipe

  • 1 saute leeks, onion, carrot and celery in butter in a stockpot or large saucepan.
  • 2 add chicken broth, water, and potatoes and bring to boil.
  • 3 simmer 15 minutes.
  • 4 puree mixture in batches in blender, and return to pot.
  • 5 add milk and wine and reheat.
  • 6 add salt and pepper to taste.
  • 7 serve topped with parsley.
