Quick Beef Stew

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 5
  • 1 lb beef, cut up, cooked (2 to 2 1/2 cups)
  • 4 medium carrots, cut into 2
  • 3 medium potatoes, pared and cut into 1 1/2-inch pieces
  • 1 cup celery, sliced
  • 1 (1 1/4 ounce) envelope onion soup mix
  • 3 tablespoons unbleached flour
  • 2 1/4 cups water

Recipe

  • 1 mix all ingredients in 2 1/2 quart casserole.
  • 2 cover and microwave on high (100%) to boiling, 10 to 12 minutes; stir.
  • 3 cover and let stand 5 minutes and microwave until vegetables are tender, 10 to 12 minutes more, stirring every 5 minutes.
