Quick Black Bean Soup

Ingredients
- 2 (15 ounce) cans black beans
- 3/4 cup diced onion
- 1 jalapeno
- 1 garlic clove, minced
- 1 teaspoon cumin
- 1 teaspoon vegetable oil
- 1 cup low sodium chicken broth
- 1 medium tomato, diced
Recipe
- 1 saute onion, jalepeno and garlic in oil till fragrant. add cumin and stir till fragrant. add tomato.
- 2 add one can on black beans and 1/2 cup broth.
- 3 bring to simmer and let simmer till tomato starts to break down.
- 4 puree 1/2 of soup in blender and return to pan add other can of black beans and heat through.
- 5 garnish with sour cream and avocado.
