Quick Black Bean Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 (15 ounce) cans black beans
  • 3/4 cup diced onion
  • 1 jalapeno
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 1 teaspoon vegetable oil
  • 1 cup low sodium chicken broth
  • 1 medium tomato, diced

Recipe

  • 1 saute onion, jalepeno and garlic in oil till fragrant. add cumin and stir till fragrant. add tomato.
  • 2 add one can on black beans and 1/2 cup broth.
  • 3 bring to simmer and let simmer till tomato starts to break down.
  • 4 puree 1/2 of soup in blender and return to pan add other can of black beans and heat through.
  • 5 garnish with sour cream and avocado.
