Ingredients

- 1 (20 ounce) bag simply potatoes southwest style hash browns
- 3 (15 ounce) cans fat-free chicken broth
- 1/2 cup ramps, diced (if you can't find ramps, substitute green onions or leeks)
- 1 (8 ounce) bag monterey jack cheese, shredded
- 1 cup heavy whipping cream
Recipe
- 1 clean and chop ramps. set aside.
- 2 set heavy whipping cream out of refrigerator -- bring to room temperature.
- 3 put 2 cans chicken broth into large (3 qt or larger) pot.
- 4 bring to a boil.
- 5 add simply potatoes southwest style hash browns. stir.
- 6 reduce heat to medium and cook about 20 minutes or until potatoes are tender, stirring occasionally.
- 7 reduce heat to low.
- 8 add ramps. stir.
- 9 add cheese and stir until cheese melts completely.
- 10 add heavy whipping cream.
- 11 stir over low heat for about 2 minutes.
- 12 (if thinner soup consistency is desired, pour in the additional can of broth and stir another 2 minutes.).
- 13 enjoy!
