Simply Country Hash-ramp-jack Soup #sp5

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 (20 ounce) bag simply potatoes southwest style hash browns
  • 3 (15 ounce) cans fat-free chicken broth
  • 1/2 cup ramps, diced (if you can't find ramps, substitute green onions or leeks)
  • 1 (8 ounce) bag monterey jack cheese, shredded
  • 1 cup heavy whipping cream

Recipe

  • 1 clean and chop ramps. set aside.
  • 2 set heavy whipping cream out of refrigerator -- bring to room temperature.
  • 3 put 2 cans chicken broth into large (3 qt or larger) pot.
  • 4 bring to a boil.
  • 5 add simply potatoes southwest style hash browns. stir.
  • 6 reduce heat to medium and cook about 20 minutes or until potatoes are tender, stirring occasionally.
  • 7 reduce heat to low.
  • 8 add ramps. stir.
  • 9 add cheese and stir until cheese melts completely.
  • 10 add heavy whipping cream.
  • 11 stir over low heat for about 2 minutes.
  • 12 (if thinner soup consistency is desired, pour in the additional can of broth and stir another 2 minutes.).
  • 13 enjoy!
