Simply Good Chicken Casserole

Ingredients
- Servings: 6
- 6 boneless skinless chicken breasts
- 1 quart water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (10 1/2 ounce) can cream of celery soup
- 1 (8 ounce) carton sour cream
- 1/2 teaspoon pepper
- 2 stacks buttery crackers, crushed
- 1/4 cup butter or 1/4 cup margarine, melted
Recipe
- 1 combine first 4 ingredients in a large dutch oven; bring to a boil.
- 2 cover, reduce heat, and simmer 1 hour or until tender.
- 3 remove chicken and cool.
- 4 cut chicken into bite-size pieces.
- 5 combine chicken, chicken soup and next 3 ingredients.
- 6 place half of crushed crackers in a lightly greased 11 x 7 x 1.
- 7 5 inch baking dish.
- 8 spoon chicken mixture over crackers.
- 9 top with remaining crackers, and drizzle with butter.
- 10 bake at 325 degrees for 35 minutes or until lightly browned.
