Fruit Soup

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 3 tablespoons dry tapioca
  • 2 1/2 cups water (divided)
  • 1 (6 ounce) can frozen orange juice (other juices may be substituted)
  • 3 cups fresh fruit (melons, oranges, nectarines, peaches, grapes, strawberries and bananas are good choices but use what)
  • fresh mint

Recipe

  • 1 combine tapioca and 1 cup water.
  • 2 bring to a boil and simmer 2-3 minutes.
  • 3 add orange juice and mix until well blended.
  • 4 add remaining water.
  • 5 cover and refrigerate until thoroughly chilled.
  • 6 cut fruit into bite-sized pieces and add to chilled soup.
  • 7 serve in well-chilled mugs and garnish with fresh mint if available.
  • 8 cooking time is chilling time.
