Mama D's Mama D's Busy Night, Not Quite Chicken Pot Pie

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 4 boneless skinless chicken breasts, medium dice
  • 2 (15 ounce) cans mixed vegetables, undrained
  • 1 (8 ounce) can peas, drained
  • 2 (10 3/4 ounce) cans cream of chicken soup
  • 1 (16 ounce) package buttermilk biscuit mix, usually produces about 6-8 biscuits

Recipe

  • 1 brown chicken in large skillet.
  • 2 add mixed vegetables, peas and cream of chicken soup to skillet. stir to combine.
  • 3 heat on medium high until bubbling slightly, then reduce heat and simmer for 20 minutes.
  • 4 while chicken and vegetable mixture is simmering, mix and bake buttermilk biscuits according to package directions.
  • 5 serve chicken and vegetable mixture over biscuits.
