Simple, Tasty, Fat Free Broccoli Soup!

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 heads broccoli
  • salt and black pepper
  • water

Recipe

  • 1 cut the florets off the heads of broccoli. cut the stems into similar size pieces.
  • 2 add all of the broccoli -- florets and stems -- into a pot of boiling, salted water. cover and cook for 5-10 minutes until broccoli is tender.
  • 3 remove the pan from the heat and drain half of the water off into a separate container but do not discard it!
  • 4 blend the broccoli and remaining water in the pan. add more of the cooking liquid as necessary to achieve the desired consistency.
  • 5 season and serve.
