Simple Potato Soup

Ingredients

• 14 small potatoes, peeled and cubed
• 8 cups water
• 1 1/2 teaspoons salt
• 1 1/2 teaspoons black pepper
• 2 tablespoons milk
• 11 ounces velveeta cheese, roughly cubed (approx. 1/3 large block)
• 1/2 green pepper, finely chopped (optional)

Recipe

• 1 combine all ingredients in large soup pot or stock pot.
• 2 bring to a boil.
• 3 reduce heat, cover, and simmer for approximately 30 minutes. stir frequently. the soup is done when the potatoes are soft.
