Simple Potato Soup

Ingredients
- 14 small potatoes, peeled and cubed
- 8 cups water
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons black pepper
- 2 tablespoons milk
- 11 ounces velveeta cheese, roughly cubed (approx. 1/3 large block)
- 1/2 green pepper, finely chopped (optional)
Recipe
- 1 combine all ingredients in large soup pot or stock pot.
- 2 bring to a boil.
- 3 reduce heat, cover, and simmer for approximately 30 minutes. stir frequently. the soup is done when the potatoes are soft.
