Make-ahead Breakfast Casserole

Total Time: 1 hr 10 mins Preparation Time: 15 mins Cook Time: 55 mins

Ingredients

  • Servings: 10
  • 2 1/2 cups seasoned croutons
  • 1 lb sausage
  • 4 eggs
  • 2 1/4 cups milk
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (4 ounce) can mushrooms, drained and chopped
  • 1 cup cheddar cheese
  • 1 cup monterey jack cheese
  • 1/4 teaspoon dry mustard

Recipe

  • 1 spread croutons on bottom of greased 13 x 9 inch baking dish. crumble cooked sausage over croutons.
  • 2 whisk eggs and milk in large bowl until blended. stir in soup, spinach, mushrooms, cheeses and mustard. pour egg mixture over sausage and croutons.
  • 3 refrigerate overnight.
  • 4 preheat oven to 325. bake egg mixture 50-55 minutes or until set and lightly browned on top.
