Make-ahead Breakfast Casserole

Ingredients

- 2 1/2 cups seasoned croutons
- 1 lb sausage
- 4 eggs
- 2 1/4 cups milk
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (4 ounce) can mushrooms, drained and chopped
- 1 cup cheddar cheese
- 1 cup monterey jack cheese
- 1/4 teaspoon dry mustard
Recipe
- 1 spread croutons on bottom of greased 13 x 9 inch baking dish. crumble cooked sausage over croutons.
- 2 whisk eggs and milk in large bowl until blended. stir in soup, spinach, mushrooms, cheeses and mustard. pour egg mixture over sausage and croutons.
- 3 refrigerate overnight.
- 4 preheat oven to 325. bake egg mixture 50-55 minutes or until set and lightly browned on top.
