Red Beans Rice And Sausage Soup

Ingredients

- 1 1/4 quarts chicken broth
- 2 (15 ounce) cans kidney beans, drained and rinsed
- 1 (15 ounce) can tomato sauce
- 6 ounces smoked sausage, sliced
- 1/3 cup diced carrot
- 1/3 cup diced celery
- 1/3 cup diced red bell pepper
- 1 large onion, finely chopped
- 1 garlic clove, minced
- 1/4 teaspoon dried thyme
- 1 bay leaf
- 1/3 cup long grain rice
- salt and pepper
Recipe
- 1 combine all ingredients except rice, salt and pepper in slow cooker. cover and cook on low for 4-5 hours, adding rice during last 2 hours.
- 2 discard bay leaf and season to taste with salt and pepper.
