Red Beans Rice And Sausage Soup

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 6
  • 1 1/4 quarts chicken broth
  • 2 (15 ounce) cans kidney beans, drained and rinsed
  • 1 (15 ounce) can tomato sauce
  • 6 ounces smoked sausage, sliced
  • 1/3 cup diced carrot
  • 1/3 cup diced celery
  • 1/3 cup diced red bell pepper
  • 1 large onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 1/3 cup long grain rice
  • salt and pepper

Recipe

  • 1 combine all ingredients except rice, salt and pepper in slow cooker. cover and cook on low for 4-5 hours, adding rice during last 2 hours.
  • 2 discard bay leaf and season to taste with salt and pepper.
