Red Eye Tortilla Soup

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 (33 7/8 ounce) bottle bloody mary mix (red eye brand)
  • 32 ounces chicken broth
  • 1 cup cilantro, fresh chopped
  • 1 tablespoon cumin
  • 2 chicken breasts, grilled, diced
  • 1 1/2 cups cheddar cheese (more or less) or 1 1/2 cups monterey jack cheese, shredded (more or less)
  • 3 cups tortilla chips (more or less)

Recipe

  • 1 place first 4 ingredients into a saucepan and bring to a boil.
  • 2 meanwhile, crumble tortilla chips between 8 serving bowls.
  • 3 place chicken on top of tortilla chips.
  • 4 sprinkle with cheese.
  • 5 ladle hot soup over all and serve immediately.
  • 6 garnish with sour cream if desired.
